Ok, so I’m not known for my love of sprouts. Alan is a much bigger fan and indeed are my entire family! However, I have recentlystarted employing a method I first came across on one of those clever BBC food programmes that are so well produced! And that tactic is slicing thinly before pan frying them!

Now this makes them exciting! Tonight’s batch was particularly tasty and really easy to do for a midweek dinner.

1 bag of sprouts (my bag was 550g)
1 large knob of salted butter
2 cloves of garlic finely chopped
1 Birdseye chilli
2 teaspoons of paprika
2 table spoons of crème fraîche
A pint of water
Salt and pepper to taste

Heat the butter in a non-stick pan. Take the base off of the sprouts then slice them finely. Add them to the pan along with the garlic and chilli. Add the water little by little so that the sprouts don’t burn and stir as you add. After around 10 minutes, the sprouts should be soft and there should be only a little moisture (although check the texture so they are as you like them and cook for longer if you like). Stir in the paprika and add the crème fraîche. Season and serve!

I served mine with oven baked salmon marinated in kicap manis (a Malaysian thick syrupy spy sauce which is really delicious) and some oven roasted tomatoes. All is all it was quite a speedy dinner!

I expected there to be lots left… But we don’t have as much as I thought for tomorrow’s dinner!
